Carrot Ginger Soup with Honey glazed Apple

You are busy enough getting all the wonderfull gifts for your lovely family and don’t really think about the christmas menu, you have to create for your parents, children or friends. So we thought it would be awesome, to give you a complete guide to a christmas menu right here. You don’t have to think about it, just buy the ingredients and you’re on the safe side. First part is a fresh and (if you want to) spicy carrot ginger soup with a little chili. It’s color is awesome because it has some creamy but also strong orange texture from the carrots itself. The chili and ginger gives it a slightly spicy but also refreshing taste. So the menu will be popping right from the beginning. Because we know that a christmas menu should also be something special, we added a honey glazed apple on top, so everyone should get a very nice arranged and eye poppin‘ bowl of soup.

Carrot Ginger Soup with honey caramelized Apple

Zutaten
  1. 2 Carrots
  2. 1 small Chili
  3. 1 Tsp Ginger
  4. 1 Onion
  5. 1 Apple
  6. 1/2 Clove of Garlic
  7. 1 Tbsp Butter
  8. 50ml Whitewine
  9. 500ml Stock
  10. 150ml Cream
  11. 2 Tbsp Honey
  12. Salt
  13. Pepper
For the Soup
  1. Peel the carrots and onion and chop it.
  2. Braise the onion in some butter and give in the carrots
  3. deglaze it with some whitewine, let it reduce and fill it with stock.
  4. Give in the chili and let it simmer for 20 minutes. Take the half of an apple and chop it.
  5. Give it into the soup, squeeze some garlic in and let it simmer for 10 minutes.
  6. season it with salt and pepper
  7. Take out the chili and give in the cream and cold buter and blend it till its a nice creamy soup.
For the Apple
  1. Cut the second half of an apple into 4 slices
  2. Let the honey melt in a pan.
  3. Give in the appleslices and caramelize it in the pan on a middle heat.
  4. Give the Soup into small bowls and put a slice on top of each.
