Zaziki

Firts of all a few words to some vegetables with a lot of water inside before we get to the zaziki:

Many vegetables like zucchini, aubergine or cucumbers need to be draines before they can be processed. In this way water gets out of the vegetables what leads to non watery tzatziki or a nice consistency end textured grilled zucchini. The process is always the same:

preprocess the vegetables as you would need it later. The zucchini should be sliced into 5mm slices, the cucumber for the tzatziki should be grated. Afterwards you should distribute everything as flat as possible. For the zucchini it’s perfect to have some kitchen roll and place on slice beside the other on the paper. The cucumber on the other hand should be given into a bowl because it will loose a lot of water. Now spread salt on everything, don’t be afraid, you wash it later, so give a lot on it. After 2 hours you can wash the vegetables under clean water and process the vegetables. The cucumber should be squeezed cause it lost a lot of water , that sticks between the small parts.

Now you  can process the vegetables and create some awesome zaziki, zucchini antpasti or other awesomness!

Zutaten
  1. 2 cucumbers
  2. 600g greek style yoghurt
  3. 1 clove of garlic
  4. 1/2 lemon
  5. Sea Salt
  6. fresh ground black pepper
Zubereitung
  1. mix up the drained cucumbers with the yoghurt
  2. squeeze in the garlic
  3. let it rest for at least one hour
  4. season everything with lemon, salt and pepper
