Delicious Pumpkin Tarte Flambée with Rocket Salad

Everyone know the classical Alsace Tarte Flambée, but not everyone knows that tarte flambée could be more than bacon and onion… for instance pumpkin tarte flambée with rocket salad. If there should be cheese on the tarte is a big question and an Alsatian would definetly say no, but I think a little bit of intense cheese gives the tarte more depth and a stronger taste. Of course you should not give to much on it, it should not be a pizza or something!

For Backing the Pumpkin Tarte Flambée I always use a pizza stone from Jamie Oliver, but every pizzastone should do the job. Those Pizzastones are quiet amazing, they take all the wetness from the dough, so it get’s perfectly crispy.

Pumpkin Tarte Flambée

  1. 400g flour
  2. 500g pumpkin
  3. 1 clove of garlic
  4. 300g sour cream
  5. a bit Parmesan
  6. a bit rocket salad
  7. baking powder
  8. oliveoil
  9. water
  10. salt
  11. fresh ground black pepper
  1. clean the pumpkin and cut it into 5mm slices
  2. mix up the squeezed garlic with a bit of oliveoil and salt
  3. marinate the pumpkin slices in the garlic oil and preheat the oven to 200°C grill function (top heat)
  4. put the slices on a baking plate an put it on the upper rail
  5. bake it for about 5mins till they start getting brown but pay attention, depending on your oven thats quiet fast
  6. put the pumpkins aside
  7. mix up the baking powder, grain and a bit of salt
  8. create a nice elastic dough that doesn't stick to your fingers, just add water for that
  9. use a rolling pin to unroll a flat dough for your tarte
  10. evenly spread the sourcream on the dough and put some cheese and fresh ground black pepper on it
  11. put the pumpkin on the very top
  12. bake it at the maximum heat on a middle rail
  13. put on some rocket salad and serve it hot
