Gratinate Zucchini and Aubergine with Tomato and grated Cheese

As a side dish at your next big barbecue party or as an mediteranean antipasti, vegetables with cheese are always great and doesn’t have to be boring. The guests will be happy as well to see the standard grill sides in a new way in form of those Gratinate Zucchini and Aubergine. By changing the sort of cheese you can change the focus of the dish as well. In the recipe I use Parmesan, but you can also use Old Amsterdam, Peccorino or strong Goatscheese.

Zucchini and Aubergine with Tomato and grated Cheese
  1. 1 zucchini
  2. 1 aubergine
  3. 3 tomatoes
  4. 1 clove of garlic
  5. 1 tablespoon rosmemary
  6. 1 teaspoon thyme
  7. 2 tablespoon oliveoil
  8. parmesan
  9. salt
  1. wash the zucchini, aubergine and tomatoes and slice it in 1,5cm round pieces
  2. put one slice of tomato onto one slice of aubergine or zucchini
  3. create a marinade from garlic, rosemary, thyme, salt and oliveoil
  4. sprinkle the marinade over the vegetables
  5. put some cheese on and give it into the preheat oven for about 15minutes till the chesse is nice golden brown
  1. As a variation for high intense flavour you can drain the zucchini and aubergine and marinade it for 1-2 hours before you work on it.
